Heres a
neat and simple way to make use of leftover cooked turkey or chicken.
With a 9 x 13 inch grease pan. In the center of your flour tortilla
place about 2 tablespoons of turkey or chicken, add some grated cheese
and wrap up tortilla.
Place seam side down in your greased pan and
repeat, Use 8 to 12 tortillas. Thin out one can of mushroom soup with
1/4 cup of milk, Now pour over enchiladas and add grated cheese. cook
at 350 degrees until enchiladas are heated and cheese is melted.

CHICKEN ENCHILADAS 2
1 pkg. of taco seasoning
1 can of cheese soup
1 c. of chicken broth
1 can of cream of chicken or celery or mushroom soup
1/2 c. of water
Start by mixing the ingredeents above to make your sauce. then by
adding 1 cup of your sauce mixture to 3 cups of cooked chicken you
split it between Ten flour tortillas. Cover the buttum of a 9x13 pan
with 1 cup of sauce. Now row up your 10 Enchiladas then place them
(seam down) in pan. use the remaining sauce for the top then you
garnish the top with one cup of grated chedder cheese, parsley flakes
and one chopped tomato. Cover pan with foil. Bake for 40 minutes at 350
degrees. Then you serve with you faverett salsa.

CHICKEN ENCHILADAS 3
3 chicken breasts, cooked and shredded or cut into strips
1 clove of garlic
1 med.chopped, onion
1 can cream-of-chicken
2 tsp. of butter
1 c. sharp Cheddar cheese (shredded)
2 tbsp. of flour
8 oz. sour-cream
8 to 10 flour-tortillas
Preheat the oven to 350 degrees. Brown garlic clove and onion in butter
until tender. Mix flour and sour cream. Add to onions. Stirring in the
cream of chicken soup. Cooking to a boil, stir to prevent it from
sticking. Add 1/2 of chicken and cheese. Warm your tortillas in oven or
microwave. Spoon your chicken mixture onto tortillas then wrap. Lay
them seam side down in a casserole dish. Add remaining sauce and your
grated cheese on top. Cook for about 15 minutes.
